At Xaok you find an unusual cuisine proposal that demonstrates great skill in achieving new flavors with a different perspective of beauty in each dish.
We are a small restaurant in Oaxaca that seeks to break the standards of contemporary Oaxacan cuisine with a different menu that highlights the use of native ingredients and locally consumed products; but through a diverse gastronomic vision, we present to you a culinary expression that we call multiform.
A chef with great inspiration in the gastronomic diversity and the vast availability of ingredients that exist in his culture.
He is originally from Santa María Huatulco; a special place on the coast of Oaxaca where the consumption of different fish and seafood is part of the daily culinary habits of the community. Since he was little he has been involved in the flavors of the sea and the exuberant nature that surrounds that region of fertile lands rich in ingredients.
Over the years, his interest in discovering new flavors and techniques led him to study gastronomy; a career that came naturally to him and has been full of pleasant surprises.
His journey through various avant-garde cuisines has given him the opportunity to demonstrate with complete ease all the skill and abilities he has acquired through great discipline.

Great cocktails!! I had tasajo tartar, burrata salad, short rib, fish. Burrata was so fresh. Ribs melting in your mouth, falling from the bone, tuna ceviche incredible. One dish was better than the other. I cannot tell enough how well made each dish was. 100% recommend this place. We dined on Wednesday evening, it was quite empty, but make the reservation just in case. My favorite in Oaxaca and it was recommended to me by a local. Had the taco and the risotto and both dishes were outstanding. Prices are reasonable too. The food is unique and unlike anything you will find in Oaxaca. The Burrata Salad with Guajillo Puree and warm Burata was fantastic. The Soft Shell Crab with grasshoppers and a Oaxacan chorizo emulsion was a little messy but who cares if you get your hands sticky when the flavor explodes in your mouth. The Ceviche in black squid ink was unlike any civiche we've had. We skipped desert because we had cookies baked by the nuns after church waiting in our room but it looked delicious.
